Reading Comprehension

The Best Burgers Ever

1 Frederick was enjoying his stay in America as a foreign exchange student. He had come to America in January to stay for one year with a family in New England. This family loved to go camping in a big RV. In France, Frederick had never gone camping in anything but a tent. Truthfully, he didn't consider traveling in an RV as "real" camping, but he surely enjoyed it!

2 One of his favorite parts of traveling with the McKennas was eating the wonderful food they prepared. Mr. and Mrs. McKenna really knew how to throw a feast, especially when they were camping. Mr. McKenna's specialties were big, juicy hamburgers on the grill. But these were not just any hamburgers. Mr. McKenna had a secret recipe. Frederick had never tasted meat that was more tender and flavorful. He was determined to learn how to make these burgers before returning to France! And today was the day to find out!

3 Mr. McKenna was firing up the grill when Frederick stepped out of the RV.

4 "Time for some more burgers?" Frederick asked hopefully.

5 "Yes," Mr. McKenna said with a grin.

6 "Your burgers are the best I've ever tasted, Mr. M, " Frederick said. (The McKennas allowed Frederick to call them Mr. and Mrs. M.)

7 "Thank you, Frederick."

8 "Would you tell me your secret?" Frederick asked.

9 "My secret?"

10 "Yes. Your secret recipe for making such good burgers."

11 "Oh, that," Mr. McKenna replied with a laugh. "I didn't realize it was a secret. Sure, I'll be glad to tell you."

12 "First of all, it starts with good meat. We purchase high quality ground beef from a butcher. We used to buy beef that had a higher fat content, but we are trying to watch our fats. Now we buy lean ground beef and marinate the meat instead."

13 "What does marinate mean?" Frederick asked.

14 "It simply means to let the meat soak in a mix of sauces and spices.That allows the flavor to permeate--or soak through--the meat."

15 "So," Frederick interjected, "the flavors add to the beef and also keep the beef moist?"

16 "Exactly," said Mr. McKenna.

17 "What is in the marinade?"

18 "I use a little vinegar, brown sugar, soy sauce, and honey," Mr. McKenna said. "I let the burgers sit in it for at least an hour."

19 "So, the juices sink into the meat, and grilling the burgers seals in the flavor, right?" Frederick asked.

20 "You've got it! Do you want to help me with this next batch?"

21 "Sure!"

22 Frederick got the burgers out of the RV refrigerator and brought them to the hot grill. Mr. M placed them on the rack and handed Frederick the long-handled spatula for flipping the burgers. As Frederick stepped toward the grill, the flames leapt up beyond the rack. Frederick jumped back. Mr. M laughed.

23 "Don't worry. The sauce and juices landing on the coals are causing the flames. In my opinion, the flames actually add flavor! Just be careful around them."

24 It didn't take long for the burgers to cook in that heat, so Frederick gathered the buns, condiments, lettuce, cheese, and tomatoes. Mr. M called out to the family, and soon everyone was sitting around the picnic table, enjoying the pleasant breeze while feasting on the best burgers ever. And, Frederick could barely wait to try this recipe back in France.
